Let me back up and talk for a minute about salads. I like salad. I can't say that I just hands-down love them, but I like them and I eat them because they're healthy. Well, I should say, they can be healthy. However, my most favorite salads are not very traditional. My absolute most favorite salad is a Berry Salad. If you've ever eaten at my house, especially in the summer, then I've made this for you. Basically it's just some mixture of spinach/mixed greens/romaine topped with strawberries, blueberries, sliced almonds, perhaps sunflower seeds...whatever makes you happy. I love salad with fruit on it. My other favorite type of salad I will label under the category 'Southwest.' Basically anything that has a warm protein on it (steak, chicken), bell peppers, onions, corn, black beans, squash, etc. (The BEST is the Warm Fajita Salad from Papas & Beer in Asheville. So. Stankin. Good.)
Today we are focused mainly on the fruit topped salads. Panera has a really good one every summer that I just love. I honestly don't go to Panera much except in the summertime because I love this salad so much. I was beyond thrilled to find a recipe to make the salad dressing so that I can have this fantastic salad at home, and even healthier because it's my version and I know exactly what's going into it.

Wait!!!! I just checked the ingredients of the salad - is that mayonaise I see listed?? Did you substitute? This does sounds sooo good.
